Fun Fact: Do you know that cookies are actually more regulated under the ePrivacy Directive than under GDPR? The word "cookie" figures only one time in GDPR...
But to be honest both regulations are complementary anyway and tackle data protection. Cookies are only a small part of it.
noyb - a "European Center for Digital Rights" - released their Cookie Report 2024 this summer. noyb is very active in defending users' rights and fighting for users' privacy. You might have heard about the conflict against Google Analytics and EU-US transfer that led to fines for brands in the EU.
